YUMMY KALE SALAD

Where are my kale lovers at? I’ll be honest… I like it best when paired with lots of other yummy things. That’s why this salad is great! I love it! Such great crunch and so much freshness! It’s so fun to switch up the nuts or even add a yummy cheese like goat or feta.

Yummy Kale Salad

Kale is even better when mixed with a bunch of other yummy things. This salad really hits the spot!

Salad

• 1 head kale
• 1-2 ribs celery, finely diced
• 1/2 to 1 cup blueberries
• 1/8 red onion, diced
• 1/2 apple, diced
• 1/4 cup pumpkin seeds or other nuts

Dressing

• 1/3 cup avocado oil or olive oil
• 3 T lemon juice
• 3 T honey
• 1/2 tsp mustard or 1/4 tsp mustard powder
• 1 clove garlic optional
• Blend dressing ingredients with an immersion blender or a whisk. 

Method

 

1. Remove the center rib from each piece of Kale.
2. Chop, then massage it well to help remove the bitterness.
3. Wash and dry. Add to a bowl and toss it with dressing.
