Not only are these biscuits delicious, but they are easier to make than traditional buttermilk biscuits!

High Protein Biscuit Recipe

This recipe is unique in that it calls for cottage cheese in place of butter. By using full-fat cottage cheese, you still get a soft and tender crumb at a fraction of the calories. Cottage cheese has about 12x the protein and 1/8th the calories of butter.

Don’t get me wrong, I love butter, and there is a little bit in this recipe, but the cottage cheese is a delicious twist!

Ingredients for Cottage Cheese Biscuits

Flour

Any wheat flour will do here.

Baking Powder

Don’t forget this! You’ll end up with dense and flat biscuits if you do.

Salt

I am very picky about Salt! Cottage Cheese

I use full-fat cottage cheese in this recipe. I think it tastes the best. I chose to blend the cottage cheese right in the container with an immersion blender, but you can also leave it unblended if you don’t mind the curds.

Buttermilk

Buttermilk gives these biscuits the classic biscuit flavor that you know and love!

Melted Butter

You’ve got to have a little bit of buttery goodness, or it isn’t a biscuit. I add just a small amount of butter for some extra flavor and richness.

Honey

To add a little sweetness to the biscuits.

How to Make Cottage Cheese Biscuits

This recipe is so simple. All you have to do is mix all the ingredients together in a bowl until combined. The dough shouldn’t be overly wet or overly dry, and you should be able to handle it with your hands without too much trouble.

Form the dough into 8 balls and place on a greased cookie sheet. They won’t be perfectly smooth on top, and might even end up a little spiky on top, but I like that! These biscuits definitely look a little bit rustic, and that’s okay!

Bake in a 400ºF oven for 12-15 minutes, or until the biscuits are golden brown on top.

What to Serve with Cottage Cheese Biscuits

Serve these biscuits with honey butter or jam for a perfect treat! You can also use them as a base for a breakfast sandwich, with eggs, bacon, and cheese. Serve them alongside soup for dipping, or even use them as buns for a pulled pork sandwich with coleslaw. The possibilities are endless!

Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup full fat cottage cheese- blended or not blended
  • 1/3 cup buttermilk
  • 2 Tablespoons melted butter
  • 1 teaspoon honey

Instructions

  • Preheat oven to 400 ºF. Combine the ingredients in a bowl.
  • Divide the dough into 8 balls using your hands. Place on a greased cookie sheet.
  • Bake for 12-15 minutes or until golden on top.
