Ingredients for Pumpkin Chocolate Chip Muffins

This recipe calls for simple ingredients that you probably already have on hand. Here’s what you need to make the recipe:

Pumpkin Puree

This recipe calls for an entire large 29 oz can of pumpkin puree. No weird little bit left in the can that you have no idea what to do with!

Baking Soda and Baking Powder

Baking soda and baking powder make the muffins rise and stay extra fluffy.

Salt

If you know me, you know that I am very particular about my salt. I almost always use  REDMOND REAL SALT in my cooking and baking. Cinnamon, Nutmeg, and Vanilla

Spices and vanilla add to the delicious warm Fall-inspired flavor.

Eggs

Eggs help give these muffins their pillowy texture.

Butter

Butter is my fat of choice for many baked goods, and these muffins are no exception.

Maple Syrup

I like to use maple syrup in this recipe. The muffins don’t end up tasting overly like maple, but they end up super soft and just sweet enough.

Flour

All-purpose flour is best for this recipe, but you can use whatever kind you have.

Chocolate Chips

You can use your favorite kind, but I am a huge fan of semi-sweet and dark chocolate.

How to Make Pumpkin Chocolate Chip Muffins

This recipe is effortless to put together. All you need is one bowl and about 10 minutes to throw everything together.

First, gather your ingredients and your measuring cups and spoons. Believe me, this makes things go so much quicker.

Mix your wet ingredients together until thoroughly combined, then add your dry ingredients right on top of the wet ones. Whisk it all together until combined, but don’t overmix!

Fill each muffin cup about 2/3 full and sprinkle with about 10-12 chocolate chips on top of each muffin. No need to spread them out evenly or make them perfect, but try to keep them from falling all in a heap in the center of the muffin. Bake the muffins for 17-20 minutes at 350ºF or until the muffins are domed and cooked all the way through.

Tips for Pumpkin Chocolate Chip Muffins

If you use maple syrup, the batter might seem a little bit thinner than normal. That’s okay. It will end up great!

Fill the muffin cups only 2/3 of the way full for the best muffin shape. If you fill them too full, they won’t have room to rise and will spill over and make a mess.

Toppings for Pumpkin Chocolate Chip Muffins

If you want to make these muffins without chocolate chips, you totally can. You can top them with chopped walnuts or pecans and they would be delicious too. Or if you want more of a concentrated pumpkin flavor, you could leave them plain as well.

I love the look of these muffins with the chocolate chips on top and like to leave the fluffy and soft center plain, but if you want chocolate chips inside, feel free to mix the chocolate chips into the batter.

Ingredients

  • 10 ½ tbsp butter melted
  • 2 eggs
  • 29 oz can of pumpkin puree
  • 1 ½ cups pure maple syrup can use regular sugar instead
  • 1 tsp vanilla
  • 3 cups flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • ¾ cup chocolate chips

Instructions

  • Preheat the oven to 350 º.F
  • Combine the melted butter, eggs, pumpkin puree, vanilla, and maple syrup in a large mixing bowl.
  • Add the flour, baking soda, baking powder, salt, cinnamon, and nutmeg to the bowl. Stir to combine.
  • Scoop the batter into greased or lined muffin pans. Fill each muffin 2/3 way full. Add 10-12 chocolate chips on the top of each muffin.
  • Bake for 17-20 minutes. Enjoy!
