If you’ve been following my page for a while, you might know about my family’s favorite bean dip that my husband makes for us on Sundays. This Creamy Corn Queso dip is taking its place and we’re not mad about it! It’s so delicious and easy to make and is perfect for a yummy snack. With corn, spicy peppers, and lots of deliciously creamy cheese, this Creamy Corn Queso Dip is going to be a staple in your appetizer rotation.
The Perfect Summertime Appetizer
This Corn Queso Dip is just begging to be served poolside or at your next BBQ. The ingredients are pantry staples so you can buy them and keep them for whenever you’re ready for a yummy summertime treat. This recipe takes almost no effort, and you can totally have your kids make it, too.
Ingredients for Creamy Corn Queso Dip
Cream Cheese
This is the base of this queso dip and the reason it is so creamy and yummy. I don’t really have any substitutes for this one.
Sour Cream
You could use Greek yogurt instead of sour cream if you prefer.
Grated Cheese
I like to use Pepper Jack or Monterey Jack in this recipe, but you could really use whatever cheese that you have on hand.
Canned Corn with Red Peppers
I grabbed the Del Monte brand Southwest Corn with Poblanos and Red Peppers from Walmart. You really could use any kind of canned corn, or use frozen or corn off the cob.
Canned Diced Tomatoes with Green Chiles
I use the Rotel brand Canned Diced Tomatoes with Green Chiles. You can usually find it in the canned tomato section of most grocery stores, but you could also use any diced tomatoes or even your favorite salsa to add some extra flavor!
Chopped Jalapeños
I don’t give a measurement for this because everyone’s spice preference is a little different. You can add more or less depending on how spicy you like your queso. Fresh jalapeños are delicious, but you can also use pickled jalapeños if you want less spice.
Taco Seasoning + Chile Lime Seasoning
For taco seasoning, you can make your own or just use any store bought kind that you have. For the chile lime seasoning, I know that Trader Joe’s has one that is yummy, or you can use classic Tajîn from the Mexican aisle of the grocery store!
How to Make Creamy Corn Queso Dip
This truly could not be an easier recipe. Simply combine the ingredients in a pot over the stove while stirring often, over medium heat, until melted. Once it’s all melty it’s done. Make sure to stir well because sometimes it takes a bit for the cream cheese to totally melt down. But if there are a few little chunks of cream cheese left it’s not that big of a deal. Pour into a bowl and serve!
How to Serve Creamy Corn Queso Dip
We love to eat this dip hot with chips (sometimes straight out of the pot), as an appetizer, but you could also use it as a topping for tacos, tostadas, burrito bowls, or quesadillas.
How to Store Any Leftovers
You can store any leftovers in the fridge for 4-5 days. Simply heat it up in the microwave or the stove to serve.

Creamy Corn Queso Dip
Ingredients
- 1 block 8 oz. Cream Cheese
- 1/2 cup Sour Cream
- 8 oz. Grated Monterey Jack or pepper Jack Cheese
- 1, 15 oz. Can corn with Roasted Red Peppers drained
- 1, 15 oz. Can Rotel Tomatoes and Diced Green Chiles not drained
- Chopped jalapeños- measure with your heart
- 1/2 teaspoon taco seasoning
- 1/2 teaspoon chili lime seasoning
Instructions
- Combine everything in a saucepan over the stove. Mix constantly while the flame is set to medium. It’s all melted when there are no longer chunks of cream cheese. Serve hot with chips. Enjoy!

Can this be made in a slow cooker?

I’m sure that would work on low for a couple hours. Just be sure to watch it.
